Recipe for Carrisotto

Thanks for the rave reviews on the spinach-banana shake. You see… pun intended. It even tastes great, because of the added honey.

Today, we are going to make a dish that adequately combines the digestive and nutritional properties of rice with the vitamins and softening effects of carrots.

Carrisotto

Ingredients: (for 4 servings)

* 350 g whole rice

* 250g carrots

* 1 onion

* 2 garlic cloves

* 800 ml unsalted vegetable broth

* Parsley

* Olive oil

* Sea salt (optional)

How to prepare:

Step 1: Soak the rice for 1 hour in very hot water. Or, if possible, soak in cold water overnight.

Step 2: Peel and chop the garlic and parsley.

Step 3: Peel and chop the carrots into slices and the onions into rings.

Step 4: Heat the olive oil in a large frying pan and sauté the onion until it is transparent. Now add the carrots.

Step 5: After 3 minutes add the drained rice and stir.

Step 6: Bring the vegetable broth to boil in a separate pot. You can add sea salt, if you wish. Then add the broth to the contents of the frying pan.

Step 7: Now add the chopped parsley and garlic and reduce the heat to a minimum. Simmer for an additional 20 minutes, until the rice is tender, fluffy and dry.

Step 8 . Remove from the heat and allow the dish to rest for 5 minutes. Done! Serve hot.

The vegetable broth provides mineral salts that have alkalinizing, blood cleansing and diuretic effects.

The dish, as a whole, contributes to the prevention of vision problems caused by a lack of beta-carotene (provitamin A). Protective action is also guaranteed by the fiber in the whole rice, the carrots and the garlic.

If no sea salt is added, the dish is can be very low in sodium. It is also low in saturated fats with zero cholesterol. I have already mentioned the softening effect on the intestinal lining, produced by rice and carrots.
